Ingredients

  • 1 cup dahi or Greek yogurt (cold)
  • 1 medium onion , chopped (or 1 clove garlic, chopped)
  • 1 medium firm cucumber
  • 1 green hot pepper , seeded and chopped
  • 1 tablespoon chopped cilantro leaves
  • 1 teaspoon chopped mint leaves
  • 1 teaspoon cumin (ground or seeds)
  • salt

Instructions

  1. Split the cucumber in half lengthwise, remove the seeds with a tablespoon and grate finely.
  2. Sprinkle it very lightly with salt, mix well and place it in a colander and in the refrigerator for 45 minutes.
  3. In a small pan, toast the cumin over low heat, until the aroma is released.
  4. Cool and lightly crush the cumin seeds (if using seeds) with a pestle and mortar.
  5. In a bowl, add the dahi (or yogurt), salt and whisk well until obtaining a smooth consistency.
  6. Then add the drained cucumber, onion (or garlic, to taste), half the cumin, cilantro leaves, mint leaves and green hot pepper. Mix gently.
  7. Pour the mixture into two bowls and sprinkle with the remaining cumin.
  8. Serve raita, for example, with biryani, naan or paratha.
