Raspberry Bellini Recipe

With just 4 ingredients, you can create this bubbly and delicious Raspberry Bellini! This raspberry champagne cocktail is always such a huge hit for brunch or a party for any occasion.

Ingredients

  • ½ cup raspberry purée homemade or store-bought, chilled
  • 1 tbsp lemon juice freshly squeezed
  • 1 bottle rosé champagne or sparkling wine, also called pink champagne
  • raspberries fresh or frozen
  • mint leaf fresh

Instructions

  1. Measure out the raspberry sauce into a bowl or measuring cup and add the lemon juice to it.
  2. Put 1 tbsp of raspberry mixture into each champagne glass.
  3. Top the glass with the champagne.
  4. Optional: garnish with frozen/fresh raspberries, mint leaves, etc.

Notes

  • Puree raspberries, sugar, water, and lemon juice in a mini food processor; strain through a fine-mesh sieve, pressing to release as much juice as possible. Discard solids.
  • 6 oz fresh raspberries
  • 3 Tbsp superfine sugar
  • 2 Tbsp water
  • 1 1/2 tsp fresh lemon juice
