Raspberry Bellini Recipe
With just 4 ingredients, you can create this bubbly and delicious Raspberry Bellini! This raspberry champagne cocktail is always such a huge hit for brunch or a party for any occasion.
Ingredients
- ½ cup raspberry purée homemade or store-bought, chilled
- 1 tbsp lemon juice freshly squeezed
- 1 bottle rosé champagne or sparkling wine, also called pink champagne
- raspberries fresh or frozen
- mint leaf fresh
Instructions
- Measure out the raspberry sauce into a bowl or measuring cup and add the lemon juice to it.
- Put 1 tbsp of raspberry mixture into each champagne glass.
- Top the glass with the champagne.
- Optional: garnish with frozen/fresh raspberries, mint leaves, etc.
Notes
- Puree raspberries, sugar, water, and lemon juice in a mini food processor; strain through a fine-mesh sieve, pressing to release as much juice as possible. Discard solids.
- 6 oz fresh raspberries
- 3 Tbsp superfine sugar
- 2 Tbsp water
- 1 1/2 tsp fresh lemon juice
