Raspberry Butter

Ingredients

  • 1 cup unsalted butter, softened
  • ½ cup fresh raspberries
  • 1 tablespoon powdered sugar

Instructions

  1. Add the softened butter and powdered sugar to a stand mixer bowl and mix on high with the paddle attachment for about 20 seconds. Scrape down the sides with a spatula.
  2. Add the fresh raspberries to the bowl. Mix on medium speed for 5-10 seconds until the berries break apart, but not completely break down.
  3. Dump the butter mixture onto a sheet of plastic wrap set over a sheet of foil. Wrap and roll the butter mixture into a log, twisting the foil ends as you go to make the log compact.
  4. Chill for at least 2 hours until firm and keep refrigerated until ready to use.
