Raspberry Coulis Recipe
Raspberry Coulis is a smooth sauce made by gently simmering fresh raspberries with lemon juice, sugar, and water until thickened, then straining to remove seeds. The resulting sweet, tangy coulis can be chilled and used to enhance desserts with fresh berry flavor and a vibrant red color.

Ingredients
- 1 cup raspberries fresh
- lemon juice of ½ lemon
- ¼ cup sugar
- 2 tablespoons water cold
Instructions
- Add the raspberries, lemon juice, sugar, and water to a medium-sized pot.
- Cook over medium heat until it becomes thick and jammy. This will take about 15 to 20 minutes.
- Strain the coulis through a fine mesh strainer or a chinois.
- Chill the sauce until it’s cold. Serve or store.

Notes
- This coulis can be prepared up to three days in advance and stored in the refrigerator.
- For longer storage, it freezes well for about three months and should be thawed in the refrigerator before use.
- After freezing and thawing, reheating and cooling again may be necessary to restore consistency.
- Using fresh raspberries is best, but freezing surplus raspberries into this sauce helps prevent waste.
