Raspberry Fool - The perfect date dessert

Ingredients

  • 3 cups raspberries fresh
  • ⅓ cup sugar
  • 2 tablespoons water
  • ⅔ cup whipping cream

Instructions

  1. Set aside 2 raspberries for garnish
  2. Combine remaining raspberries with sugar and water in a heavy medium saucepan. Bring to a boil over medium heat. Reduce heat, cover and cook until thickened, about 20 minutes.
  3. Press raspberries through a fine sieve and let it cool.
  4. Beat whipping cream in medium bowl until soft peaks form.
  5. Fold strained berries into cream in batches. Spoon into goblets. Top each with 1 raspberry and refrigerate for 1 hour.

Notes

  • Use fresh raspberries to avoid mushy texture and preserve their fragrance.
  • Keep an eye on the raspberries while cooking to prevent burning as the juice can be sticky.
  • Reserve some fresh raspberries for garnish to enhance presentation.
