Raspberry Stuffed French Toast

This stuffed Raspberry Cheesecake French toast recipe makes for an easy indulgent weekend breakfast or a decadent weeknight dessert!

Ingredients

  • 2 lices bread
  • 2 tablespoons cream cheese
  • 1/4 cup raspberries
  • 1 egg
  • 1/4 cup milk
  • 2 teaspoons sugar divided
  • 1/2 tsp cinnamon
  • pinch salt
  • 1 teaspoon butter
  • Syrup optional topping

Instructions

  1. In a small bowl, with a fork, crush the raspberries, then mix in cream cheese, and 1 tsp sugar.
  2. In a shallow bowl or deep plate, mix the egg, milk, cinnamon, 1 tsp sugar and salt.
  3. Spread the raspberry cream cheese mix on both slices of bread and make a sandwich.
  4. Dip both sides of the sandwich into the egg/milk mixture.
  5. Heat your pan over medium heat. Once hot, melt butter in a pan.
  6. Cook the sandwich over medium heat, in the pan until it is golden brown on both sides, about 2-3 minutes per side.
  7. Top with more raspberries, whipped cream, syrup and/or powdered sugar.

Notes

  • The recipe can be doubled or tripled. 
  • Fresh raspberries can be swapped for 1-2 tablespoons of raspberry jam.
