Ingredients

  • ½ cup butter
  • ¼ cup sugar
  • ¼ cup brown sugar
  • 1 teaspoon vanilla
  • 1 egg
  • 1 ¼ cup flour all-purpose
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder
  • ⅓ cup raspberry jam

Instructions

  1. Preheat oven to 350ºF.
  2. Cream together the butter, white sugar, and brown sugar until combined.
  3. Add the egg. Beat on medium speed for 2 minutes until light and fluffy.
  4. Add the vanilla and mix until combined.
  5. Add the flour, salt, and baking powder.
  6. Mix until just combined.
  7. Portion dough into 1-inch in diameter balls. Press your thumb into the dough until a slight depression is made, enough to fill with jam.
  8. Bake for 13 minutes, until lightly golden brown.
  9. Let cool.
  10. Fill the depression with raspberry jam.
