Raspberry Vinaigrette

Raspberry vinaigrette is a delicious balance of tangy and sweet. Perfect on field greens, fruit salads or baby spinach.

Ingredients

  • 2 Tablespoons raspberry vinegar
  • 2 Tablespoons white wine vinegar
  • 1/2 cup olive oil
  • 1 Tablespoon shallot minced
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon fresh thyme minced
  • sea or Kosher salt to taste
  • black pepper to taste

Instructions

    Cup of Yum
  1. Mince shallot and chop fresh thyme.
  2. Whisk vinegars, shallot, thyme, and Dijon mustard in a small bowl.
  3. Slowly whisk in olive oil a Tablespoon at a time. Taste dressing half way through, and season with salt and pepper. Add more olive oil until the right balance is achieved.
  4. Serve over raspberry salad.
