Raspberry Vinaigrette
Raspberry vinaigrette is a delicious balance of tangy and sweet. Perfect on field greens, fruit salads or baby spinach.

Ingredients
- 2 Tablespoons raspberry vinegar
- 2 Tablespoons white wine vinegar
- 1/2 cup olive oil
- 1 Tablespoon shallot minced
- 1/2 teaspoon Dijon mustard
- 1/2 teaspoon fresh thyme minced
- sea or Kosher salt to taste
- black pepper to taste
Instructions
- Mince shallot and chop fresh thyme.
- Whisk vinegars, shallot, thyme, and Dijon mustard in a small bowl.
- Slowly whisk in olive oil a Tablespoon at a time. Taste dressing half way through, and season with salt and pepper. Add more olive oil until the right balance is achieved.
- Serve over raspberry salad.
