Raspberry Vinaigrette

A summery dressing with fresh raspberries.

Ingredients

  • 60 g raspberries
  • 3 tbsp Walnut oil or Light olive oil
  • 1 tbsp balsamic vinegar
  • ½ tbsp cider vinegar
  • 1 tsp runny honey
  • ½ tsp Dijon mustard
  • Salt and freshly ground pepper

Instructions

    Cup of Yum
  1. Put all the ingredients into a small blender/herb chopper and whizz for 1 minute.
  2. Store in the fridge and shake before serving.
  3. Dress your favourite salad leaves. Use within 4 days.

Notes

  • The picture shows a double portion.
