Ingredients

  • 1 pound Water spinach
  • 2 teaspoons olive oil
  • ½ teaspoon ginger grated
  • 5 cloves garlic sliced
  • 2 tablespoons vegetarian oyster sauce
  • 1 teaspoon brown sugar or coconut sugar, or palm sugar
  • 2 teaspoons lime juice
  • ¼ teaspoon white pepper
  • ½ teaspoon salt
Optional Garnishes:
  • cilantro leaves
  • 1 tablespoon fried shallots
  • Sliced bird’s eye chilies

Instructions

  1. Trim the tough ends from the water spinach and cut the stems and leaves into 3-inch (8 cm) pieces.
  2. Rinse the greens under cold running water and drain them in a colander or wire mesh strainer.
  3. Heat the oil in a large pan over medium heat. After 90 seconds when the oil is hot, add the ginger and garlic, stirring frequently for 3-4 minutes until fragrant and lightly golden.
  4. Add the water spinach to the pan and stir-fry over medium-high heat for 2-3 minutes until the leaves wilt and the stems become tender.
  5. In a small bowl, mix the vegetarian oyster sauce, sugar, lime juice, white pepper, and salt.
  6. Pour the mixture over the water spinach and stir well, cooking for another 1-2 minutes until evenly coated.
  7. Transfer to an attractive serving dish and garnish with cilantro, fried shallots, and sliced chilies, if using.
