Rauwe spinazie gazpacho met groene asperges

Lekkere koude soep die binnen enkele minuten klaar is. Meng de spinazie met tomaten, komkommer, knoflook en limoensap. Voeg dan gehakte groene asperges toe en garneer met basilicum.

Ingredients

  • 2 flinke handen spinach 2 cups
  • 2 handjes tomato 1 cup
  • ⅓ cucumber 1 cup
  • 180 ml water (¾ cup)
  • 1 lime
  • of ½ of ½ lemon
  • 1 teentje garlic
  • 6 blaadjes basil

Instructions

  1. Pers de knoflook, snij de tomaten en komkommer in stukjes. Als je cherrytomaatjes hebt, gebruik dan wat extra voor garnering (halveren).
  2. Meng de spinazie met de knoflook, tomaten, komkommer, limoensap en water.
  3. Was de asperges en snijd ze in hapklare stukjes. Roer door, maar bewaar de kopjes voor garnering.
  4. Giet de soep een kom en leg de aspergekopjes, gesneden cherrytomaatjes en basilicum erop.
