Raw Beet, Carrot and Apple Salad

A tasty vegan side dish salad that is both sweet to eat and gorgeous to look at.

Ingredients

For the Dressing
  • 1 orange
  • 1 Tablespoon lime juice
  • 2 Tablespoons olive oil
  • 1 Tablespoon honey vinegar
  • pinch salt optional
For the Salad
  • 2 carrots
  • 1 apple
  • 3 beets

Instructions

    Cup of Yum
  1. Zest and juice the orange.
  2. Combine the orange juice and zest in a bowl, and add the lime juice, oil and vinegar. Stir. Add a pinch of salt if desired.
  3. Peel and shred the carrots, apple and beets.
  4. Layer the vegetables in a quart mason jar, shredded beets first, then shredded carrots, then shredded apple.
  5. Pour the dressing over top. Refrigerate until ready to serve.
  6. Pour the mason jar into a bowl and stir when ready to serve.
