Raw spinach gazpacho with green asparagus

Nice cold soup that can be ready within minutes. Just blend the spinach with tomatoes, cucumber, garlic, and lime juice. Then sir in chopped green asparagus and garnish with with basil.

Ingredients

  • 2 cups spinach
  • 1 cup tomato
  • 1 cup cucumber
  • ¾ cup water
  • 1 lime
  • or ½ or ½ lemon
  • 1 clove garlic
  • 6 leaves basil

Instructions

  1. Press the garlic, chop the tomatoes and cucumber. If you have cherry tomatoes use some extra for garnish (cut in half).
  2. Blend the spinach with the garlic, tomatoes, cucumber, lime juice and water.
  3. Wash the asparagus and chop in bitesize pieces. Stir in, but save the heads for garnish.
  4. Poor into a bowl and top with the asparagus heads, cut cherry tomatoes and basil.
