Raw spinach soup with cashews, samphire, sprouts and cress
Nice cold soup that can be ready within minutes. Just blend the spinach with lime juice, water, garlic and ginger. Top with samphire and cress or sprouts of your choice.
Ingredients
- 3 handsful spinach
- 1 small handful cress or other sprouts or both half/half
- sprouts other than cress
- ½ handful cashew nuts no longer fatfree and free from nuts
- 1 lime
- 1 handful samphire
- 1 tbsp coconut aminos no long free from ferment
- or ½ or ½ lemon
- 1 tbsp sesame oil no longer free from seeds and oils
- 1 clove garlic
- 1 tbsp ginger fresh
- 1 cup water
Instructions
- Press the garlic, grate the ginger.
- Blend the spinach with the garlic, ginger, lime juice and water.
- Poor into a bowl and top with the samphire and cress.
- Optional to blend in the cashews.
- Optional to top with some extra it's and drips of coconut aminos and sesame oil.
