Ingredients
- salted butter or unsalted, for greasing baking tray
- ½ teaspoon baking soda
- ½ teaspoon cinnamon powder
- ¼ teaspoon salt
- 1½ cup all-purpose flour
- 1 cup brown sugar
- ⅓ cup salted butter room-temperature (½ stick)
- 2 egg (medium)
- 1¼ cup coarsely grated coconut
Instructions
1. Preparing
- Grease a baking tray. Pre-heat oven to 300 °F (145 ºC).

2. Mix dry ingredients
- Sift baking soda, cinnamon, salt, and flour together, set aside.
3. Make cookies
- Combine sugar and butter in the stand mixer bowl, and beat at low speed until the butter acquires a light color.Add eggs, one by one, while beating continuously. Remove from the mixer. Fold in the coconut with a spatula, followed by the flour.Two spoonfuls at a time, make little mounds of the dough on the baking tray.
4. Bake cookies
- Bake until they turn golden brown (check at the 15 min mark).Cool to room temperature before serving.
Notes
- If yours turn out flatter, don't fret, that's exactly how the store-bought ones look.
