Red Cabbage Slaw
Red cabbage slaw with a sweet and tangy vinegar dressing. This slaw has no mayonnaise in the dressing so it's very low in calories.
Ingredients
- 1 red cabbage grated, shredded or chopped, medium head
- 1 green bell pepper thinly sliced, large
- 2 carrot grated, large
- 3 green onions finely chopped
- 1 cup apple cider vinegar
- 2 tablespoons celery seed
- ⅔ cup sugar
- 1 tablespoon mustard powder dry
- salt to taste
- black pepper to taste
Instructions
- Core and remove outer leaves from cabbage. Shred or grate cabbage as you prefer. Place shredded cabbage in a large bowl.
- Slice the bell pepper very thinly and add to the bowl; grate carrots into the bowl. Finely chop green onions and add them as well.
- Add the remaining ingredients. Stir well to mix thoroughly. Let slaw sit for at least 30 minutes before serving. Leftovers refrigerate well.
