Red Cabbage Slaw

Red cabbage slaw with a sweet and tangy vinegar dressing. This slaw has no mayonnaise in the dressing so it's very low in calories.

Ingredients

  • 1 red cabbage grated, shredded or chopped, medium head
  • 1 green bell pepper thinly sliced, large
  • 2 carrot grated, large
  • 3 green onions finely chopped
  • 1 cup apple cider vinegar
  • 2 tablespoons celery seed
  • ⅔ cup sugar
  • 1 tablespoon mustard powder dry
  • salt to taste
  • black pepper to taste

Instructions

  1. Core and remove outer leaves from cabbage. Shred or grate cabbage as you prefer. Place shredded cabbage in a large bowl.
  2. Slice the bell pepper very thinly and add to the bowl; grate carrots into the bowl. Finely chop green onions and add them as well.
  3. Add the remaining ingredients. Stir well to mix thoroughly. Let slaw sit for at least 30 minutes before serving. Leftovers refrigerate well.
