Red Fruit Salad with Honeyed Yogurt

Strawberries, watermelon, raspberries and pomegranate seeds make for a juicy, sweet and delicious red fruit salad. A dollop of yogurt and drizzle of honey finishes it off.

Ingredients

  • 1 cup watermelon sliced into chunks
  • 1 cup strawberries sliced
  • 1 cup raspberry
  • 1 cup yogurt dairy, coconut or coconut whipped cream
  • 2 tbsp honey or maple syrup for vegan
  • 1/2 cup pomegranate seeds
  • mint leaves optional, for garnish

Instructions

    Cup of Yum
  1. Place all the fruit in a medium-sized mixing bowl and mix together.
  2. Divide the fruit evenly between two plates and top with the yogurt.
  3. Drizzle the honey on top and sprinkle with pomegranate seeds. Add a mint leaf for garnish and serve immediately.
