Red Velvet Cookies

These easy red velvet cookies are soft, chewy, and packed with sweet white chocolate chips—perfect for any occasion.

Ingredients

  • 1 box red velvet cake mix (15.25 oz.)
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 cup white chocolate chips

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium bowl, mix the cake mix, eggs, and oil with a spoon. Fold in the chocolate chips.
  3. Drop by heaping spoonfuls on a parchment paper-lined cookie sheet.
  4. Bake for 9-11 minutes or until they are set.
  5. Cool for 3 minutes on the pan and then transfer to a wire rack to cool completely.

Notes

  • Use a cookie scoop to get evenly-sized cookies.
  • Keep cookies fresh in an airtight container at room temperature for up to a week. 
  • You can change this red velvet cookie recipe (and the taste) by using different cake mix flavors. Be sure to use a 15.25 oz box). For a deeper color, red food coloring can be added.
  • Freeze extras in a zippered freezer bag for up to 4 months.
