Reece's Pieces Cookies

Ingredients

  • 1 ¼ cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup butter melted, salted
  • ½ cup peanut butter creamy
  • ⅓ cup brown sugar
  • ¼ cup granulated sugar
  • 1 egg (room temperature)
  • 1 tsp vanilla
  • 1 cup Reese's Pieces candies

Instructions

  1. Preheat the oven to 350°F. Line large baking sheets with silicone baking mats or parchment paper.
  2. Combine flour, baking soda, and salt in a medium mixing bowl and whisk together.
  3. In a large mixing bowl, cream the melted butter, peanut butter, brown sugar, and granulated sugar together until smooth.
  4. Add the egg and vanilla extract to the butter and sugar mixture and beat until well combined.
  5. Add the combined dry ingredients to the creamed mixture in the large bowl and mix just until ingredients are combined, then stir in the Reese's Pieces.
  6. Using a large cookie scoop or large spoon, scoop out a heaping tablespoon of dough and roll into a smooth ball with your hands, then place balls on the prepared cookie sheet at least 2" apart.
  7. Gently flatten out balls slightly using the bottom of a heavy glass then bake for 10 minutes or until the edges start to turn golden brown but the middle is still soft.
  8. Remove them from the oven and gently press additional Reese's Pieces into the top of each cookie while they are still hot.
  9. Leave cookies on the pan for at least 10 minutes to allow them to finish cooking, then remove and let cool on wire baking rack.

Notes

  • Store baked cookies in an airtight container for up to five days to maintain freshness.
  • Freeze shaped cookie dough balls on a tray, then store in a freezer bag for up to three months; bake from frozen, adding a few extra minutes to the baking time.
  • Dough can be made ahead and refrigerated up to three days before baking; let sit at room temperature before shaping.
  • Substitute Reece's Pieces with other mix-ins like chocolate chips or nuts while keeping the quantity the same for consistent texture.
