Reece's Pieces Cookies
Reece's Pieces Cookies are peanut butter-based cookies studded with colorful Reece's Pieces candies. They have a soft, chewy center with slightly crisp edges and a subtle peanut butter flavor complemented by the candy's sweet crunch. These cookies are convenient for baking ahead or freezing dough balls, making them practical for hand-held treats or dessert gatherings.
Ingredients
- 1 ¼ cups all-purpose flour
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup butter melted, salted
- ½ cup peanut butter creamy
- ⅓ cup brown sugar
- ¼ cup granulated sugar
- 1 egg (room temperature)
- 1 tsp vanilla
- 1 cup Reese's Pieces candies
Instructions
- Preheat the oven to 350°F. Line large baking sheets with silicone baking mats or parchment paper.
- Combine flour, baking soda, and salt in a medium mixing bowl and whisk together.
- In a large mixing bowl, cream the melted butter, peanut butter, brown sugar, and granulated sugar together until smooth.
- Add the egg and vanilla extract to the butter and sugar mixture and beat until well combined.
- Add the combined dry ingredients to the creamed mixture in the large bowl and mix just until ingredients are combined, then stir in the Reese's Pieces.
- Using a large cookie scoop or large spoon, scoop out a heaping tablespoon of dough and roll into a smooth ball with your hands, then place balls on the prepared cookie sheet at least 2" apart.
- Gently flatten out balls slightly using the bottom of a heavy glass then bake for 10 minutes or until the edges start to turn golden brown but the middle is still soft.
- Remove them from the oven and gently press additional Reese's Pieces into the top of each cookie while they are still hot.
- Leave cookies on the pan for at least 10 minutes to allow them to finish cooking, then remove and let cool on wire baking rack.
Notes
- Store baked cookies in an airtight container for up to five days to maintain freshness.
- Freeze shaped cookie dough balls on a tray, then store in a freezer bag for up to three months; bake from frozen, adding a few extra minutes to the baking time.
- Dough can be made ahead and refrigerated up to three days before baking; let sit at room temperature before shaping.
- Substitute Reece's Pieces with other mix-ins like chocolate chips or nuts while keeping the quantity the same for consistent texture.
