Ingredients
- 1 ¼ cups all-purpose flour
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup salted butter (melted)
- ½ cup creamy peanut butter
- ⅓ cup brown sugar
- ¼ cup granulated sugar
- 1 egg (room temperature)
- 1 tsp vanilla
- 1 cup Reese's Pieces candies
Instructions
- Preheat the oven to 350°F. Line large baking sheets with silicone baking mats or parchment paper.
- Combine flour, baking soda, and salt in a medium mixing bowl and whisk together.
- In a large mixing bowl, cream the melted butter, peanut butter, brown sugar, and granulated sugar together until smooth.
- Add the egg and vanilla extract to the butter and sugar mixture and beat until well combined.
- Add the combined dry ingredients to the creamed mixture in the large bowl and mix just until ingredients are combined, then stir in the Reese's Pieces.
- Using a large cookie scoop or large spoon, scoop out a heaping tablespoon of dough and roll into a smooth ball with your hands, then place balls on the prepared cookie sheet at least 2" apart.
- Gently flatten out balls slightly using the bottom of a heavy glass then bake for 10 minutes or until the edges start to turn golden brown but the middle is still soft.
- Remove them from the oven and gently press additional Reese's Pieces into the top of each cookie while they are still hot.
- Leave cookies on the pan for at least 10 minutes to allow them to finish cooking, then remove and let cool on wire baking rack.

Notes
- Store cookies in an airtight container for up to five days.
- Freeze rolled cookie dough balls on a baking sheet. Once frozen, transfer to a freezer safe zipper top bag (aka freezer bag) and freeze for up to three months. When ready to bake, bake from frozen and just add a few minutes to the bake time (take them out when they start to get golden brown).
- Make the cookie dough ahead of time and refrigerate for up to three days before baking. When ready to bake, let sit at room temperature for 15 minutes before rolling the balls and baking according to the directions in the recipe card.
- Mix it up by using the peanut butter base with different mix-ins other than the Reeses Pieces candies. Try them with chocolate chips, peanut butter chips, caramel chips, nuts, or even coconut. Just stick with the same amount (1 cup) of mix-ins so you don’t ruin the ratio of dough to mix-ins.
