Refried Black Beans

Tender and flavorful these Homemade Refried Beans cook up in 15 minutes and are the perfect Tex Mex side dish.

Ingredients

  • 2 tablespoons avocado oil or extra virgin olive oil
  • 4 cloves garlic minced
  • 2 (15 ounce cans) black beans or 3 cups cooked black beans, drained and rinsed
  • ⅓-½ cup chicken broth or vegetable broth
  • ½ teaspoon salt (or more to taste)
  • ½ teaspoon ground cumin
  • ¼ teaspoon paprika

Instructions

  1. Heat oil in a medium size saucepan over medium heat.
  2. Add in the garlic and cook for 30 seconds until fragrant. 
  3. Add the beans and 1/3 cup broth and stir to combine.
  4. Add seasonings and bring to a simmer, cover and cook for 7-8 minutes.
  5. Remove the lid, stir and reduce heat to low.
  6. Using a potato masher, mash the beans to desired consistency.
  7. Add more chicken broth as needed to thin out the beans if they become too thick from mashing.
  8. Taste and adjust seasonings as desired.
  9. Cover and let cook over low heat for an additional 5 minutes.
  10. Serve with fresh cilantro and any other favorite toppings.
