  • 28 ounces canned whole peeled tomatoes
  • 20 ounces ROTEL
  • ¼ cup yellow onion peeled and chopped
  • 1 clove garlic peeled and chopped
  • 1 Jalapeño quartered, seeded & sliced thin
  • ½ cup cilantro stems removed
  • ½ lime juiced
  • ¼ teaspoon salt
  • ¼ teaspoon granulated sugar
  • ¼ teaspoon ground cumin

Instructions

    Cup of Yum
  1. Add all of the ingredients to a food processor.
  2. Cover and pulse until the salsa is your desired consistency. (I like mine on the chunky side.)
  3. Pour in a bowl and cover with plastic wrap or pour into a large mason jar. Refrigerate for at least 1 hour.
  4. Pour into a bowl and serve with your favorite tortilla chips for dipping.

Notes

  • If you like spicy salsa, you can leave in the jalapeno seeds and/or double the amount of jalapeno.
