Ingredients
- 28 ounces canned whole peeled tomatoes
- 20 ounces ROTEL
- ¼ cup yellow onion peeled and chopped
- 1 clove garlic peeled and chopped
- 1 Jalapeño quartered, seeded & sliced thin
- ½ cup cilantro stems removed
- ½ lime juiced
- ¼ teaspoon salt
- ¼ teaspoon granulated sugar
- ¼ teaspoon ground cumin
Instructions
- Add all of the ingredients to a food processor.
- Cover and pulse until the salsa is your desired consistency. (I like mine on the chunky side.)
- Pour in a bowl and cover with plastic wrap or pour into a large mason jar. Refrigerate for at least 1 hour.
- Pour into a bowl and serve with your favorite tortilla chips for dipping.

- If you like spicy salsa, you can leave in the jalapeno seeds and/or double the amount of jalapeno.
