Ingredients
For the Russian dressing
- 2 tablespoons mayonnaise
- 2 tablespoons sour cream
- 1 tablespoon ketchup
- 1 tablespoon pickle relish
- 1 tablespoon lemon juice , freshly squeezed
- 1 teaspoon creamy horseradish
- salt
- black pepper , freshly ground
For the sandwich
- 16 oz. corned beef , sliced
- ½ teaspoon olive oil
- 6 lices rye bread
- 2 tablespoons unsalted butter , softened
- 6 oz. Sauerkraut , well drained
- 6 lices Swiss cheese
Instructions
- In a bowl, mix all the ingredients needed for the Russian dressing. Set aside.
- In a pan, over medium heat, add the olive oil and heat it.
- Once hot, add the corned beef and cook until hot.
- Lightly butter one side of each slice of rye bread.
- Place the bread (butter side down) in a large dish.
- Add toppings to each sandwich: spread with Russian vinaigrette. Garnish by layering the slices of hot corned beef, 2 slices of Swiss cheese and sauerkraut.
- Top with another slice of bread to create a sandwich.
- In a hot pan, grill the sandwiches over medium heat for 4 to 6 minutes, turning only once.
- Grill them, without burning them, until the cheese melts and the bread is crispy.
