Reviro

Reviro is a traditional recipe from the Alto Paraná department of Paraguay. It consists of a fried dough that is broken into small croutons.

Ingredients

  • 5 cups flour
  • 1 teaspoon salt
  • 1 egg (optional)
  • 1 cup water (approximately)
  • 2 tablespoons margarine (or 4 tablespoons vegetable oil), for frying

Instructions

  1. Mix the flour and salt in a large bowl.
  2. Stir the water gradually while stirring vigorously by hand or with a wooden spoon until a light and homogeneous dough starts to detach from the sides of the bowl.
  3. In a cast iron or stainless steel pan, heat the margarine or oil over medium-high heat.
  4. Place the dough in one block in the hot fat.
  5. After a few minutes, when the bottom of the dough is a little brown, turn it over and cook the other side for 3 minutes.
  6. Using a wooden spoon, beat the dough several times until it breaks into small pieces.
  7. Cook these small dough croutons on low/medium heat for about 10 minutes, stirring regularly until lightly browned.
