Rhubarb Lemonade

This Rhubarb Lemonade brings a unique sweet and tart twist to the refreshing summer classic drink. Yield: 3 1/2 - 4 cups

Ingredients

  • 2 c rhubarb, cleaned and chopped
  • 1 c sugar (more as desired)
  • 3 lemons, zested and juiced
  • 3 cups water

Instructions

  1. In a medium saucepan, combine rhubarb, sugar, lemon juice and zest, and 1 cup of water. Bring to a boil, and simmer until the rhubarb is soft (20-30 min).
  2. Remove mixture from heat and allow to cool completely.
  3. Strain the mixture through a fine mesh sieve, pressing to remove as much juice from the rhubarb pulp as you can.
  4. Add 2 cups of water to the rhubarb syrup. (Taste the lemonade to be sure you like the tartness and sweetness.)
  5. Chill the lemonade for at least 1 hour and serve over ice.
