Ingredients

  • Lime wedges for salt rim on glasses and final garnish
  • coarse salt for the glass rims
  • 8 ounces chilled Ruby Rhubarb Syrup
  • 6 ounces tequila blanco
  • 1 ounce orange liqueur such as Cointreau
  • 4 ounces freshly squeezed lime juice
  • 4 ounces freshly squeezed orange juice
  • chilled club soda

Instructions

For A Pitcher (4 drinks):
    Cup of Yum
  1. Prep the glasses: Add coarse salt to a small plate. Rub the cut side of a lime wedge around the rim of a glass and dip the glass upside-down into the salt. Repeat with the other 3 glasses.
  2. Make the rhubarb margarita mix: In a small pitcher, combine the Ruby Rhubarb Syrup, tequila, orange liqueur, lime juice, and orange juice, and give it a stir. Use right away or make this up to 2 hours in advance and keep chilled in the fridge.
  3. Make the rhubarb margaritas: Divide rhubarb margarita mixture evenly between the four prepared glasses (or just make 1 at a time), about 6 ounces of margarita mix per glass.
  4. Fill each glass ⅔ full with ice, then top with chilled club soda to almost fill the glass. With a spoon, quickly swirl the drink to incorporate the heavier rhubarb syrup mixture into the club soda.
  5. Squeeze a lime wedge over the top and toss it into the glass. Garnish with fresh cut rhubarb and more lime wedges, if desired.

Notes

  • As always, taste and adjust to your own preferences. If you like a sweeter and less tart drink, add more Ruby Rhubarb Syrup and less lime juice. If you like a super tart drink, increase the lime. Etc, etc.
