Ingredients

  • 125 grams butter
  • ¾ cup sugar
  • 1 egg
  • 2 cups rice bubbles
  • 1 cup self-rising flour or 1 cup plain/all purpose flour + 2 teaspoons baking powder

Instructions

  1. Pre-heat oven to moderate (180 degrees celsius, fan-forced).
  2. Grease baking trays.
  3. Cream butter and sugar until light and fluffy.
  4. Add lightly beaten egg and beat again until combined.
  5. Fold in rice bubbles.
  6. Fold in sifted flour.
  7. Roll tablespoons of mixture into balls and place on greased tray, leaving room for spreading.
  8. Cook for 10-12 minutes.
  9. Remove from oven and allow to cool for 5 minutes on tray before transferring to a cooling rack to cool completely.
