Ingredients

  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1/2 cup tomato sauce
  • 1/4 cup finely chopped onion
  • 1 clove garlic minced
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon salt
  • fresh cilantro chopped for garnish

  1. Rinse the rice under cold water until the water runs clear to remove excess starch, which helps prevent clumping.
  2. Combine the rinsed rice, chicken broth, tomato sauce, onion, garlic, cumin, chili powder, and salt in the rice cooker.
  3. Stir the mixture to ensure that the ingredients are evenly distributed.
  4. Set the rice cooker to the standard white rice cooking setting and start the cooking process.
  5. Once the rice cooker cycle is complete, let the rice sit for an additional 5 minutes to steam.
  6. Fluff the rice with a fork and garnish with freshly chopped cilantro before serving.
