Crostata Dough
- 250 gms flour 8.8 oz
- 125 gms sugar 4.4 oz
- 125 gms unsalted butter 4.4 oz., softened
- 1 egg
- 1 pinch salt
Filling
- 500 gms ricotta 1.1 lbs
- 250 gms caster sugar 8.8 oz
- 50 gms dark chocolate chips 1.75 oz
- 2 raisins 3 tbsp, alternative to caster sugar
- 1 tbsp orange zest chopped (optional, candied
- 1 tbsp rum
- 1 tsp vanilla essence
- 1 egg optional
- icing sugar
Notes
- If you want a thicker filling, add an egg to it. I usually don't, as I like my filling to be creamier.
