Ridiculously Easy Caesar Salad Dressing

Love Caeser salad? Make it yourself at home with this Ridiculously Easy Caesar Dressing (no raw eggs!). It's crazy delicious and comes together in under 10 minutes, from start to finish!

Ingredients

  • ½ cup good quality mayo (I use Hellman’s)
  • ½ cup Greek yogurt
  • 2 medium cloves garlic finely minced
  • 2 tablespoons fresh lemon juice
  • 2 teaspoon Dijon mustard I use and really like Maille Dijon
  • ½ teaspoon Worcestershire sauce 
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • ½ teaspoon anchovy paste (or fish sauce) optional
  • ½ cup freshly grated Parmesan cheese I use Parmigiano-Reggiano
  • 2 tablespoons good quality extra virgin olive oil
  • Milk to thin if needed

Instructions

  1. . Combine all the ingredients except the Parmesan and olive oil in a medium size bowl and whisk until nice and smooth.
  2. Add the Parmesan and stir to combine.
  3. Slowly add the olive oil while whisking vigorously. Take a taste and add more lemon juice, salt or anchovy paste/fish sauce.
  4. If the dressing is a little too thick, add milk as desired to thin.
