Ridiculously Easy Strawberry Coulis

This super easy Fresh Strawberry Coulis pairs deliciously with yogurt, and so many desserts.

Ingredients

  • 2 quarts strawberry hulled and sliced, fresh
  • 1 cup granulated sugar maybe more
  • 2 tablespoons lemon juice fresh

Instructions

To make in the microwave:

  1. Combine berries, sugar and lemon juice in a large, microwave-safe bowl. Stir well to combine.
  2. Cook on high power for 1 minute. Remove from the microwave and stir again.
  3. Repeat the 1 minute in the microwave followed by a good stir 3 more times. The berries should have released a lot of their juice by this time.
  4. Transfer the mixture to a blender or food processor container and blend for 1 minute on high. Taste and add more sugar and/or lemon juice, if needed.
  5. For a super smooth sauce, strain the coulis through a fine mesh strainer into a clean bowl.
  6. Chill for at least 3-4 hours in the refrigerator. (The sauce will get thicker as it cools.) Serve and enjoy!

  2. Heat over medium-high heat, stirring frequently, until the mixture comes to a simmer. Simmer for 4-5 minutes, stirring frequently or until the berries have released a lot of their juices.
  3. Transfer the mixture to a blender or food processor container and blend for 1 minute on high. Taste and add more sugar and/or lemon juice, if needed.
  4. For a super smooth sauce, strain the coulis through a fine mesh strainer into a clean bowl.
  5. Chill for at least 3-4 hours in the refrigerator. (The sauce will get thicker as it cools.) Serve and enjoy!
  6. The coulis will last for 3-5 days in the refrigerator and for 6-9 months in the freezer.
