Risotto Recipe
A classically creamy Italian rice dish that fills the belly and warms the heart.
Ingredients
- 4 cups chicken broth low-sodium
- 1 tablespoon olive oil
- 1 onion finely chopped, small
- 2 cloves garlic minced
- 1 cup arborio rice
- 1/2 cup white wine dry
- 1/2 cup Parmesan Cheese grated
- salt to taste
- black pepper to taste
- 2 tablespoons butter unsalted
- parsley chopped (for garnish, fresh
Instructions
- In a saucepan, keep chicken broth warm over low heat.
- In a separate large pan, heat olive oil over medium heat. Add onion and garlic, sauté until onion is translucent.
- Add Arborio rice to the pan, stirring to coat with oil. Cook for 2 minutes.
- Pour in white wine, stirring until the wine is mostly absorbed.
- Add warm broth one ladle at a time, stirring continuously until each ladle is absorbed before adding the next. Continue until rice is creamy and al dente, about 20 minutes.
- Stir in Parmesan cheese, butter, and season with salt and pepper. Garnish with fresh parsley.
