Ingredients

  • 4 cups chicken broth low-sodium
  • 1 tablespoon olive oil
  • 1 onion finely chopped, small
  • 2 cloves garlic minced
  • 1 cup arborio rice
  • 1/2 cup white wine dry
  • 1/2 cup Parmesan Cheese grated
  • salt to taste
  • black pepper to taste
  • 2 tablespoons butter unsalted
  • parsley chopped (for garnish, fresh

Instructions

  1. In a saucepan, keep chicken broth warm over low heat.
  2. In a separate large pan, heat olive oil over medium heat. Add onion and garlic, sauté until onion is translucent.
  3. Add Arborio rice to the pan, stirring to coat with oil. Cook for 2 minutes.
  4. Pour in white wine, stirring until the wine is mostly absorbed.
  5. Add warm broth one ladle at a time, stirring continuously until each ladle is absorbed before adding the next. Continue until rice is creamy and al dente, about 20 minutes.
  6. Stir in Parmesan cheese, butter, and season with salt and pepper. Garnish with fresh parsley.
