Risotto with dried mushrooms

Ingredients

  • 1 1 liter vegetable broth
  • 150 150 g dried porcini mushrooms
  • 30 30 g butter
  • 1 1 onion
  • 3 3 sprigs of parsley
  • 400 400 g rice
  • 30 30 g grated Parmesan cheese
  • 3 3 tablespoons extra virgin olive oil
  • 1 1 clove garlic
  • salt to taste

Instructions

  1. Place the mushrooms in a bowl full of water for half an hour, then drain and wash them well.
  2. Cut the mushrooms into small pieces and cook them in a pan with a clove of garlic and three tablespoons of oil for 20 minutes.
  3. Clean the onion, finely cut it, then fry it in a pan with butter until golden.
  4. Add the rice and toast it for 2 minutes over medium heat, then reduce heat to a minimum and add two ladles of broth and mushrooms.
  5. Add salt and continue cooking until the rice is al dente.
  6. Once ready, turn off the burner and add the grated parmesan and chopped parsley.
  7. Mix well, season with salt and serve!
