Ritz Cracker Thin Mints

Ritz Cracker Thin Mints are a combination of crispy Ritz crackers and sweet mint chocolate. The perfect balance of salty and sweet in every bite make these irresistible. This is a super easy version of the beloved Girl Scout cookie recipe.

Ingredients

  • 80 Ritz crackers 4 sleeves
  • 1 Container chocolate frosting
  • 1 teaspoon mint extract
  • 12 ounces chocolate chips
  • 1 cup Andes mints finely chopped

Instructions

  1. Stir together the chocolate frosting and mint extract until combined.
  2. Spread the frosting over the bottom of 40 cookies, then press the remaining cookies on top to make a sandwich.
  3. Melt the chocolate chips in the microwave in 30 second intervals, stirring between each interval, until the chocolate is melted.
  4. Dip each cracker sandwich in the melted chocolate until it’s fully coated.
  5. Place the coated cracker on a piece of parchment paper and immediately sprinkle a small amount of chopped Andes mints on top.
  6. When all the cookies have been coated, place them in the refrigerator to chill for at least 30 minutes before serving.
