Ingredients

  • 1 tbsp butter or olive oil
  • 1 yellow onion sliced thinly
  • sea salt to taste
  • 1-2 tbsp water if needed
  • Focaccia rolls sliced in half
  • horseradish mustard to taste
  • mayonnaise to taste
  • roast beef thinly sliced
  • Havarti cheese slices
  • arugula

Instructions

    Cup of Yum
  1. Preheat the oven to 350 degrees.
  2. Melt the butter in a large skillet over medium heat. Add the sliced onions and cook, stirring often, for 20-30 minutes, or until caramelized and golden brown.  Season with sea salt, to taste.  Side Note: If the skillet gets dry, add a tablespoon or two of water.
  3. Place the sliced focaccia bread directly on the rack in the oven and toast for about 3-5 minutes.
  4. Slice the leftover roast beef into thin slices.
  5. Spread mayonnaise and horseradish mustard, to taste, on the toasted roll.
  6. Place the roast beef on the bottom bun then top with a slice of Havarti.
  7. Place back in the oven and cook until the cheese melts, about 3-4 minutes.
  8. Remove the sandwich from the oven and place a large spoonful of caramelized onions on top of the melted cheese.
  9. Add the arugula and place the remaining half of the roll on top.
  10. Serve immediately.  Enjoy!
