Ingredients

  • 2 2 tablespoons olive oil
  • 1 1 onion sliced
  • 2 2 cloves garlic diced
  • 1 1 (14.5 ounce) can diced tomatoes
  • 1 1 (14.5 ounce) can black olives , drained
  • 4-6 4-6 boneless skinless chicken breasts
  • 1/2 1/2 teaspoon kosher salt
  • 1/2 1/2 teaspoon paprika
  • 1/4 1/4 teaspoon ground cumin
  • 1/4 1/4 teaspoon ground black pepper
  • Fresh parsley for garnish optional

Instructions

  1. Preheat oven to 350º F.
  2. Drizzle olive oil into a medium saute pan or a large skillet over medium-high heat. Add onion and garlic and saute until the onions just begin to become tender. Stir in tomatoes and black olives and arrange chicken breasts in pan.
  3. Mix together salt, paprika, cumin, and pepper and sprinkle on top of the chicken. Place into preheated oven and bake until juices of the chicken run clear when pricked with a sharp knife, about 25 - 30 minutes.
  4. Sprinkle on fresh parsley, if using.
