Roasted Asparagus and Tomatoes

Oven roasted asparagus and tomatoes is a simple but flavorful side dish to throw together! Great flavor and texture throughout the whole dish.

Ingredients

  • 1 bunch asparagus ~20 stalks
  • 1 pint tomatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 tablespoons Parmesan Cheese

Instructions

    Cup of Yum
  1. Preheat oven to 400ºF.
  2. Toss asparagus and tomatoes with olive oil and salt and pepper.
  3. Roast for about 15 minutes or until the asparagus is tender but slightly crunchy and the tomatoes have burst.
  4. Sprinkle with parmesan cheese.
