Roasted Asparagus Caesar Salad
This roasted asparagus Caesar salad is packed full of flavor and a great twist to classic roast asparagus. Plus you’ll love the homemade Greek yogurt Caesar dressing!
Ingredients
For dressing:
- 1/3 cup yogurt plain, Greek
- 2 tablespoons Parmesan Cheese grated
- 2 tablespoons Dijon mustard creamy
- 1 tablespoon lemon juice
- 2 teaspoons olive oil
- 1 teaspoon anchovy paste
- 1 teaspoon garlic grated
- kosher salt to taste
- black pepper to taste, fresh cracked
For asparagus:
- 1 pound asparagus ends trimmed
- 10 croutons homemade, garlic butter flavor
- 2 tablespoons Parmesan Cheese shaved
Instructions
For dressing:
- In a small bowl whisk together all ingredients. If the mixture is too thick simply thin it out with a little water.
For asparagus:
- Preheat oven to 425 degrees F.
- Trim asparagus ends, lay flat on a cookie sheet, and drizzle with olive oil.
- Sprinkle with kosher salt and black pepper.
- Roll stalks on the sheet to evenly cover with seasoning and oil.
- Add to oven and depending on the thickness of your asparagus stalks it should be done anywhere between 7 and 10 minutes.
- Remove asparagus from the oven, drizzle with the desired amount of Caesar dressing, croutons and shaved Parmesan. Sprinkle with black pepper if desired.
