Roasted Beet and Goat Cheese Salad

Delicious roasted beets are tossed with a maple syrup mustard dressing, then served with goat cheese and assorted greens.

Ingredients

  • 6 cups salad greens washed and spun dry
  • 2 cups beet roasted
  • ⅓ cup chevre sliced or diced
Mustard Salad Dressing
  • 1/4 cup maple syrup
  • 2 tablespoons olive oil
  • 2 tablespoon mustard greens European style seeded mustard, brassica mustard
  • 1 tablespoon balsamic vinegar

Instructions

    Cup of Yum
  1. Combine the greens, beets and chèvre in a large bowl.
  2. Combine the vinaigrette ingredients using a lidded jar to shake the ingredients together.
  3. Pour over the salad then toss to coat all the ingredients.
  4. Split between two plates and enjoy!

Notes

  • Feel free to play around with the dressing ingredients to adjust it to your liking.
