Roasted Broccoli

Roasted broccoli that’s crispy, caramelized, and totally snack-worthy—seriously, I could eat the whole pan! It’s a great side dish to add flavor and greens to any meal.

Ingredients

  • 1 head broccoli cut into florets
  • 2 tablespoons olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 lemon zested and juiced

Instructions

    Cup of Yum
  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. In a large bowl, toss the broccoli with olive oil, garlic, paprika, salt, pepper, and lemon zest.
  3. Spread the broccoli in a single layer on a baking sheet and roast, flipping halfway through, until the broccoli is tender and slightly charred at the edges, 15-20 minutes.
  4. Transfer the roasted broccoli to a serving platter and add the lemon juice on top.

Notes

  • Storage: Kept in an airtight container in the fridge, the broccoli will last 3-4 days. I recommend reheating it in the microwave for a couple of minutes!
