Roasted Broccolini with Garlic, Pine Nuts, and Parmesan

Ingredients

  • 1 tbsp olive oil
  • 6 oz broccolini
  • Pinch of Crushed Red Pepper Flakes to taste
  • Sea Salt and Freshly Cracked Pepper to taste
  • 2 small cloves of Garlic minced
  • 1 tbsp toasted pine nuts
  • 1 tbsp parmesan shredded

Instructions

  1. Preheat the oven to 400 degrees. Coat a baking dish or baking sheet with olive oil cooking spray.
  2. Toss the broccolini with olive oil, crushed red pepper flakes, sea salt, and freshly cracked pepper, to taste.
  3. Place into the oven and roast for 10-12 minutes.
  4. Once it's fork-tender, remove from the oven and toss with the minced garlic.
  5. Place back into the oven and cook for another 2 minutes. Side Note: Cooking the garlic for only a few minutes prevents it from burning and overpowering the broccolini.
  6. Remove from the oven and place into a serving dish. Sprinkle the top with toasted pine nuts and shredded Parmesan cheese. Serve immediately. Enjoy.
