Roasted Brussels Sprouts Recipe

Ingredients

  • ½ pound Bacon sliced into small pieces
  • 2 pounds Brussels sprouts cut in half
  • ½ cup blue cheese crumbled
  • salt to taste
  • black pepper to taste

Instructions

  1. Preheat the oven to 400°.
  2. Add the bacon to a large frying pan over medium-high heat and cook it until it is crisp and brown.
  3. Set the bacon lardons to the side and then add the sprouts to the pan with the rendered bacon fat over high heat and sear for 8-10 minutes stirring every minute or so until lightly browned.
  4. Transfer the brussels sprouts pan to the oven and bake at 400° for 15-20 minutes or until browned and tender.
  5. Remove from the oven, season with salt and pepper, and add the brussels sprouts to a serving bowl and toss with the cooked crisp bacon lardons and sprinkle on crumbled blue cheese.

Notes

  • This dish is best served immediately after preparation to enjoy the crisp textures and full flavors.
  • You can keep the cooked Brussels sprouts warm in a covered pot in the oven set to 225° for up to one hour before serving.
  • Store leftovers covered in the refrigerator for up to three days; reheat in a frying pan over medium heat to restore some crispness.
  • Freezing is possible for up to three months, but reheated sprouts may become mushy quickly.
  • Adding dried cranberries or cherries when finishing adds a sweet contrast that complements the salty bacon and tangy blue cheese.
  • If bacon is not available, cooking the sprouts in oil is an alternative, though some depth of flavor from bacon fat will be lost.
