Ingredients

  • 1 butternut squash about 2-3 pounds, medium
  • 2 tablespoons olive oil
  • 1 teaspoon salt sea salt
  • 1/2 teaspoon black pepper ground

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. Peel the butternut squash, cut it in half lengthwise, and remove the seeds. Then cut the squash into 1-inch cubes.
  3. In a large bowl, toss the butternut squash cubes with olive oil, salt, and pepper until they are evenly coated.
  4. Spread the seasoned squash cubes in a single layer on the prepared baking sheet, ensuring they are not touching for even roasting.
  5. Roast in the preheated oven for 25-30 minutes, or until the squash is tender and the edges are starting to turn golden brown. Halfway through, stir the squash to ensure even cooking.
