Roasted Cauliflower and Carrots

Ingredients

  • 1 cauliflower cut into florets, head
  • 4 carrot peeled and sliced, large
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • salt to taste
  • black pepper to taste

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Wash and cut the cauliflower into florets and peel and slice the carrots.
  3. Arrange the cauliflower and carrots on the prepared baking sheet. Drizzle with olive oil and sprinkle with garlic powder, paprika, salt, and pepper. Toss to ensure the vegetables are evenly coated. Roast in the preheated oven for 25 minutes or until tender and slightly caramelized.
