Roasted Cherry Tomatoes

Fresh cherry tomatoes are tossed in simple seasonings & roasted to perfection!

Ingredients

  • 2 pints cherry tomatoes or grape tomatoes, about 1 pound
  • 2 cloves garlic minced
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • salt and pepper to taste
  • 1 tablespoon thinly sliced fresh basil leaves or chopped fresh parsley, optional for serving

Instructions

  1. Preheat oven to 425°F.
  2. Toss tomatoes, garlic, oil, vinegar, and seasonings on a baking sheet with a rim.
  3. Roast for 15 minutes or until softened. Broil for 1-2 minutes to add a little bit of color if desired.
  4. Toss with fresh herbs if using and serve warm.

Notes

  • Grape tomatoes can be substituted.
  • If using fresh basil, chop and sprinkle over the tomatoes once they come out of the oven.
  • For a little char, broil them for a minute or two before removing them from the oven.
  • The tomatoes are cooked when the skins start to burst a little bit.
