Ingredients
- 8 chicken thighs
- 2 tbsp butter/olive oil
- 4 garlic cloves crushed
- 2 tbsp fresh herbs thyme, rosemary, oregano, sage and parsley are all good options
- 2 cups white wine
- 1 tbsp lemon juice
- salt and pepper to taste
Instructions
- Preheat the oven to 200°C/390°F.
- Pat the chicken thighs dry with paper towels then season on both sides with salt.
- Heat a large skillet or ovenproof pan over medium-high heat then add the chicken, skin-side down.
- Allow to cook for 8-10 minutes or until the skin is golden brown.
- Remove the chicken from the pan and set aside.
- In the same pan, melt the butter or heat the oil.
- Add the crushed garlic and herbs and cook until fragrant then pour in the white wine and lemon juice.
- Season with salt and pepper then add the chicken back to the pan, skin-side up.
- Place the chicken in a hot oven and allow to roast for 10-15 minutes until the chicken is crisp and cooked through.
- Remove the chicken from the oven then scatter with chopped parsley (optional) and serve.
