Roasted Cumin Butter Broccoli

Ingredients

  • 1 ½ pound broccoli cut into florets
  • 2 tablespoons butter
  • ½ teaspoon cumin ground
  • ¼ teaspoon chipotle powder optional
  • pinch sugar
  • ½ teaspoon salt
  • ⅛ teaspoon black pepper
  • cotija cheese optional

Instructions

  1. Preheat oven to 450 F degrees. Lightly spray a baking sheet with nonstick cooking spray or line with parchment paper. Set aside.
  2. Melt butter in a small saucepan over medium heat or melt in the microwave. Stir in cumin, chipotle powder, sugar, salt and pepper. Add broccoli to a large bowl and toss evenly with Cumin Butter.
  3. Line broccoli on prepared baking sheet in a single layer and roast for 14-16 minutes or until cooked to desired tenderness.
  4. Sprinkle with desired amount of Cotija Cheese (optional) and season with additional salt and pepper to taste if desired.
