Ingredients

  • 1 lb (4 cups) frozen brussels sprouts or however many you want for your meal
  • 1-3 teaspoons oil
  • salt
To serve (optional)
  • Parmesan Cheese or vegetarian/vegan grated hard cheese

Instructions

    Cup of Yum
  1. Preheat the oven to 430F / 220C - you'll need the oven to be quite hot.
  2. Put the frozen brussels sprouts onto the baking sheet (no need to thaw them first!), drizzle with the oil and sprinkle with a little salt.
  3. Place the baking sheet into the oven and roast the sprouts for 25 minutes or until soft inside and crispy on the outside.
  4. If desired, sprinkle with a little parmesan and more sea salt.

Notes

  • It’s important to know that the brussels sprouts will not be crispy when they are finished. They will be slightly brown on the outside and tender all the way through.
  • Once they are fully cooked, test for desired flavor and toss with more oil or salt if needed as the roasting process may have absorbed a lot of the flavor.
  • Most frozen brussels sprouts come in their whole form. It’s ok to roast them whole with no need to cut them.
  • Do not overcrowd the baking sheet with brussels sprouts as that will cause them to steam and become mushy. Make sure they are in a single layer on the baking sheet.
