Ingredients

  • 1 head garlic roasted
  • 1 bunch parsley around 1 to 1 ½ cups, packed, Italian flat leaf, fresh
  • ½ cup extra virgin olive oil
  • ¼ cup apple cider vinegar
  • ¾ teaspoon red pepper flakes
  • ½ teaspoon cumin ground
  • ½ teaspoon salt fine sea salt

Instructions

  1. Add all ingredients to a food processor, and puree until smooth.
  2. For best results, wait at least 2 hours (at room temperature) before use to let the flavors develop.
  3. Drizzle it over mains or sides, like grilled steak or chicken, or roasted potatoes.

Notes

  • Allow the chimichurri to rest at room temperature for at least two hours before serving to allow flavors to meld and smooth out.
  • Avoid tasting immediately after making, as the raw garlic and vinegar flavors may seem sharp until the sauce rests.
  • Use Italian flat-leaf parsley for its fresh herbal note.
