Roasted Grape Bruschetta with Whipped Feta

Ingredients

Roasted Grapes
  • 1 bunch red grapes rinsed
  • 2 tablespoons extra virgin olive oil
  • kosher salt
  • black pepper
Whipped Feta Spread
  • 1 cup feta cheese
  • 6 tablespoons extra virgin olive oil
  • ½ teaspoon black pepper
  • 1 small orange zested
Bruschetta
  • 1 loaf sourdough sliced into ½” thin slices and toasted
  • Roasted Grapes
  • Whipped Feta Spread
  • additional orange zest

Instructions

Roast the Grapes
    Cup of Yum
  1. Preheat the oven to 400°F.
  2. Line a baking sheet with parchment paper.
  3. Place the rinsed and patted dry grapes onto the parchment paper.
  4. Drizzle with olive oil, then season with salt and pepper.
  5. Roast for 25 minutes, then turn up the oven’s temperature to 450°F. Roast an additional 10 minutes.
  6. Remove from the oven, and let cool.
Prepare the Whipped Feta Spread
  1. In the food processor, measure out the feta cheese, olive oil, pepper and orange zest.
  2. Process until smooth.
  3. Set aside.
Make the Bruschetta
  1. Place out the toasted slices of bread.
  2. Using a knife, smear the Whipped Feta onto the bread.
  3. Top the feta with a few roasted grapes, removed from the stem.
  4. Zest a little orange zest on top of the bruschetta.
  5. Repeat until all the bread slices have been prepared.
  6. Enjoy immediately.
